Garlic Lotus Root Shrimp
Garlic lotus root shrimp is a light Chinese home-style dish with steamed lotus root, tender shrimp, and a fragrant garlic soy sauce poured over the top.

Ingredients
- 1 lotus root
- 8 shrimp
- 5 cloves garlic
- 1 scallion
- Light soy sauce, to taste
- A small pinch of salt
- Sugar, to taste
- Water, as needed
- Vegetable oil, as needed
Instructions
- Prepare all ingredients.

- Peel the lotus root, cut it into slices, and place the slices on a plate.

- Pour enough water into a pot. Put the lotus root plate on a steaming rack. After the water boils, reduce to low heat.

- While the lotus root is steaming, peel and mince the garlic. Rinse the scallion and chop it finely.

- Remove the shrimp vein, whiskers, and legs, then rinse the shrimp well.

- Mix a sauce with light soy sauce, sugar, and a small pinch of salt. Stir until evenly combined.

- Heat vegetable oil in a wok until about 70 percent hot, then add the minced garlic.

- Stir-fry the garlic until fragrant, then pour in the prepared sauce.

- Once the sauce is aromatic and well combined, turn off the heat.

- Place the shrimp on top of the steamed lotus root.

- Pour the hot garlic sauce over the shrimp and lotus root.

- Steam for 5 minutes, then turn off the heat and let it sit covered for another 5 minutes before removing from the pot.

- Sprinkle chopped scallion over the dish.

- Serve the garlic lotus root shrimp while hot.

- Finished dish.

Cooking Tips
- Steam the lotus root first; it usually becomes tender after about 20 minutes. Do not steam the shrimp for more than about 5 minutes, or the texture may become tough.
